Veja abaixo uma receita bem legal, aprovada pelo chef Paulo Machado!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredientes:&lt;br /&gt;&lt;br /&gt;1 kg de peito de frango bem limpo, sem pele e em cubos de 2 cm&lt;br /&gt;&lt;br /&gt;3 colheres (chá) de canela em pó&lt;br /&gt;&lt;br /&gt;1 colher (chá) de cominho em pó&lt;br /&gt;&lt;br /&gt;1 colher (chá) de gengibre em pó&lt;br /&gt;&lt;br /&gt;1 colher (sopa) de molho de pimenta-vermelha ou a gosto&lt;br /&gt;&lt;br /&gt;50 g de manteiga&lt;br /&gt;&lt;br /&gt;1 cebola grande picadinha&lt;br /&gt;&lt;br /&gt;2 dentes de alho picadinhos&lt;br /&gt;&lt;br /&gt;6 pistilos de açafrão&lt;br /&gt;&lt;br /&gt;1 litro de água&lt;br /&gt;&lt;br /&gt;1/3 de maço de salsinha, amarrado com um barbante&lt;br /&gt;&lt;br /&gt;6 cebolas roxas grandes em fatias finas&lt;br /&gt;&lt;br /&gt;2/3 de xícara de uva passa escura&lt;br /&gt;&lt;br /&gt;2 colheres (sopa) de açúcar&lt;br /&gt;&lt;br /&gt;3 xícaras de fava fresca já debulhada ou congelada&lt;br /&gt;&lt;br /&gt;2 xícaras de cuscuz marroquino&lt;br /&gt;&lt;br /&gt;1 xícara de amêndoa em lâminas finas&lt;br /&gt;&lt;br /&gt;2 colheres (sopa) de mel&lt;br /&gt;&lt;br /&gt;azeite de oliva espanhol&lt;br /&gt;&lt;br /&gt;sal e pimenta-do-reino&lt;br /&gt;&lt;br /&gt;Modo de Preparo:&lt;br /&gt;&lt;br /&gt;Numa panela média, misture a carne, 2 colheres de chá de canela, o cominho, metade do gengibre e o molho de pimenta e deixe repousar fora da geladeira por 1 hora. Acrescente um fio de azeite, metade da manteiga, a cebola picadinha, o alho, 2 colheres de chá de sal, um pouco de pimenta e 2 pistilos de açafrão, tampe e aqueça, mantendo o fogo baixo por uns 10 minutos e mexendo de vez em quando, até soltar um caldinho. Então, adicione a água e o amarrado de salsinha, tampe parcialmente a panela e cozinhe por aproximadamente 30 hora, até que a carne esteja bem macia. Com uma escumadeira, retire e reserve os pedaços de carne, separe 2 xícaras do caldo para regar o cuscuz e guarde o restante para as cebolas.&lt;br /&gt;&lt;br /&gt;Numa frigideira grande, aqueça mais um fio de azeite e a manteiga restante e doure bem as cebolas fatiadas com uma pitada de sal, depois acrescente o restante do gengibre e da canela, 2 pistilos de açafrão, a uva passa, o açúcar e o caldo reservado para as cebolas e deixe em fogo forte até conseguir um molhinho encorpado, que cubra o dorso de uma colher, então retire do fogo e reserve. Vinte minutos antes de servir, coloque o cuscuz numa tigela grande. Aqueça o caldo reservado com o restante do açafrão e um pouquinho de sal, retire do fogo quando ferver e despeje sobre o cuscuz. Deixe descansar por 10 minutos, mexendo de vez em quando para soltar os grumos e, ao final do tempo, regue com um fio de azeite e misture. Doure ligeiramente a amêndoa numa frigideira grande e seca e reserve. Na mesma frigideira, aqueça mais um fio de azeite, junte o frango e o mel e deixe dourar um pouco. A primeira explica que surgiu em função das festividades ocorrem durante o mês de junho. Outra versão diz que está festa tem origem em países católicos da Europa e, portanto, seriam em homenagem a São João. No princípio, a festa era chamada de Joanina.&lt;br /&gt;De acordo com historiadores, esta festividade foi trazida para o Brasil pelos portugueses, ainda durante o período colonial (época em que o Brasil foi colonizado e governado por Portugal).&lt;br /&gt;Nesta época, havia uma grande influência de elementos culturais portugueses, chineses, espanhóis e franceses. Da França veio a dança marcada, característica típica das danças nobres e que, no Brasil, influenciou muito as típicas quadrilhas. Já a tradição de soltar fogos de artifício veio da China, região de onde teria surgido a manipulação da pólvora para a fabricação de fogos.
